Install\u00e9e en GAEC avec mon conjoint mara\u00eecher, nous cultivons 13,5 hectares afin de nourrir les bouches de notre territoire&nbsp;!<\/p>\n<p><strong>Pour le pain, nous produisons du bl\u00e9 et du seigle que j\u2019emm\u00e8ne moudre au moulin de Quincampoix, \u00e0 Rimou (35) qui nous fournit ainsi une belle farine<\/strong>. Nous ne sommes pas autonomes en c\u00e9r\u00e9ales par manque de terres&nbsp;; il nous faudrait 5-6 hectares de plus pour le devenir. Ainsi, quand nos silos sont vides, la farine ne vient plus de nos c\u00e9r\u00e9ales mais directement du moulin (qui se fournit en bl\u00e9 dans le grand ouest de la France).<\/p>\n<p><strong>Boulang\u00e8re par amour du contact avec la p\u00e2te, je p\u00e9tris et fa\u00e7onne le pain \u00e0 la main<\/strong> car j\u2019aime sentir sous mes doigts la farine, le levain et l\u2019eau se transformer en une incroyable masse \u00e9lastique et souple. Qui l\u00e8ve, se d\u00e9veloppe, se transforme encore une fois sous mes paumes en petites boules bien tendues, qui vont ensuite s\u2019\u00e9panouir en croustillant dans le four \u00e0 bois. C\u2019est un processus qui demande du temps et j\u2019aime ce temps qui s\u2019\u00e9tire&#8230;<\/p>\n<p><strong>Boulang\u00e8re par gourmandise aussi, je produis du pain au levain pur, c\u2019est-\u00e0-dire sans ajouter de levure boulang\u00e8re<\/strong>. Cela donne un pain qui se conserve bien plusieurs jours, voire une semaine, et qui est plus digeste. Bien entendu (mais c\u2019est bien de le pr\u00e9ciser&nbsp;!) il n\u2019y a aucun additif dans mon pain, uniquement farine, levain, eau et sel.<\/p>\n<p>Le pain sp\u00e9cial que je vous propose est un pain \u00e9labor\u00e9 sur la m\u00eame base, dans lequel j\u2019ajoute au gr\u00e9 des envies graines, noix, fruits secs, olives\u2026 En essayant de varier chaque semaine.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Je suis boulang\u00e8re et paysanne bio depuis 2015 \u00e0 Vignoc.
